For now only the more infectious variants became dominant. If we continue with high incidence and get higher vaccination rates, don't we generate more resistent variants as well?

We already have lineages like Beta or A.30 that are almost as refractory to neutralizing antibodies as the virus could potentially get. The thing is, it doesn't need to mutate in dozens of places to evade antibodies - a single well-placed mutation per antibody class does it.

The vaccines don't protect against long covid. Either vaccines can be improved so vaxxed people don't get infected, or there will have to be a constant vigilance to eliminate these outbreaks

If I read you correctly, you are referring to what could happen to "zero-covid" countries and how they would manage the eventual introductions. For the rest of the world where COVID will be endemic in the proper sense "pretty mild" could be an understatement.
