What would you need to see to make you think the vaccines aren’t worth the risk?

Not sure what you're asking. There are several vaccines that have already been abandoned because they were too high-risk

In this case (COVID), what would need to happen for you to reverse your position on these vaccines? (i.e recommend NOT to take them.)

Which vaccines? The current evidence-base for, say, Pfizer is extremely strong, you'd need a massive study demonstrating a damning lack of efficacy, or a really enormous safety concern at this point

But those things would almost certainly have already been picked up, so while it's not impossible that there'll be such an issue it is at this point very unlikely

Unless there are long term downsides...? And this absolutely floors me: How can you promote something so strongly with (almost?) zero warnings about the unknowns?

What do you mean? At this point we have 18-month data from the original phase 1/2 trials, and 12-month data from phase 3, as well as literally billions of doses given. It is unlikely that serious issues would be missed, they'd have to be extremely rare

On the flip side, we are still discovering the long-term impacts of a COVID infection, but every indication is that they are 100s of times worse than the very slim chance that there is a serious risk yet to be identified from, say, Pfizer
