I know the 'official' numbers, but are there estimates of the real global SARS-CoV-2 death toll? Can anybody recommend studies about that?

HICs were OK to find as long as deaths are understood between them, yes. Back in March 2020, deaths allowed epidems to estimate true infection rate from deaths in places like the UK, as dead people don't lie.

Wondering one of the central limit theorem might be able to combine that information from smaller (eg 2,000 person) cohorts of known variances?

I would expect that eg even in hic the under count factor would vary over the progress of the pandemic. Am I right? Or is the variation not significant mostly?
