What we should do is stop once we've vaccinated only those who really want the vaccine because there's no way that will leave a huge pool of people to spread the disease around

I mean, it's not like we can use various levers to incentivise people to get vaccinated, or ensure longer-term control of the pandemic

If we assume vaccine efficiency of 100% to protect against severe disease and no cost of vaccination, I'm not sure there is much of an externality. I guess that was
@natesilver538's thinking. Reality is more nuanced of course. -
In real life, vaccine effectiveness is likely to be less than 100% and the cost of vaccination is non-trivial, especially in the US for uninsured people
