      So I soak the beans overnight. Then I gently simmer just the beans and a ham hock (no salt, spices or anything else) for about 2 hours. I then drain the beans and keep half of the water it was boiled in. I only use half otherwise it’s too salty. Then I fry onion, garlic, chilli

      cumin, and black pepper in a bit of olive oil. Canola oil is fine too. Just fry for a few minutes. Add the beans back. The water I saved from cooking, a jar of passata or can of chopped tomatoes, and strip the ham hock off the bone and add that too. Let it all simmer for an hour

      or so. Add salt if you want to. I find I rarely need to as the ham hock is salty enough. Serve with rice. You don’t have to use the ham hock. It’s really nice as a vegetarian dish as well.

          I tried it with salt beef as well & it works much like the ham hock. It’s such a thrifty dish to make. The beans were 2 dollars. The ham hock was about $15 which is not super cheap but that pot will feed 10 adults. I’ve just given my neighbour half to feed her fam of 4.
