So I soak the beans overnight. Then I gently simmer just the beans and a ham hock (no salt, spices or anything else) for about 2 hours. I then drain the beans and keep half of the water it was boiled in. I only use half otherwise it’s too salty. Then I fry onion, garlic, chilli
cumin, and black pepper in a bit of olive oil. Canola oil is fine too. Just fry for a few minutes. Add the beans back. The water I saved from cooking, a jar of passata or can of chopped tomatoes, and strip the ham hock off the bone and add that too. Let it all simmer for an hour
