I'm thinking of all those nutr epi papers that use a single datapoint to calculate exposure over decades, and how reasonable it is

Might be a bit of an overstatement depending on your outcome & time frame. More your exposure measurement has error, question is how much, and how much matters. A single time point might give you enough broad characteristics to categorize general eating patterns ...

...Eg Vegitarian, lots of fast food, etc. but might be useless for extrapolating intake of single nutrients. If you are asking if eating patter at one point is associated with weight gain over the following 2 yrs, you might be fine. But vitamin intake & dementia 10 yrs later? No.
