      It's a weirdly ignorant position to take. Carbs were the staple of virtually all human diets for 1,000s of years (at least since ancient Mesopotamia) and yet we only see the obesity/diabetes epidemic now 🤷‍♂️

          One of my fave food facts is that some of the earliest recorded religious texts we've ever found are recipes for bread and beer, because making them was part of the religion

          The Torah describes The Holy Land as flowing with milk and honey. The Noble Qur'an promises a heaven with rivers of honey. It's a component of Panchamrit, a mixture of sacred foods essential to Hindu worship. But never mind all that. It's loaded with fructose, so /must/ be bad!

          Our distant ancestors ate so much fruit, we've lost the ability to de-novo synthesize ascorbate. Evidence going back at least 100 kybp that we made use of grass for food: pollen, unripe seed stalks, and sedge rhizomes. Ditto for legumes. Even older for starchy tubers.

          Substitute "carbs" for "food" and ask the same thing. A "carb" is a food throughout history. To you, it is a highly-charged negative buzzword. As if throughout history you could take the nutrition and energy out of foods and leave only "carbs".

          Everyone is ignorant in some ways. But there is a lot of misinformation being put out there. If you are surrounded by people saying something is true and it fits in with your beliefs you tend not to question it.
