One thing I think a lot of people get confused by is what scientists mean when they say "new evidence could absolutely change my position" Often, people think this means one study, and get upset when they're told one study changes nothing

We also know how absolutely lacking some studies can be, poorly controlled or with tiny samples and over- interpreted results
-
Absolutely, but I think there's a broader misconception that a single study will always be able to overturn a body of evidence even when that's often not the case

I've been reading a really bad PhD thesis for my sins that involves homeopathy and "nutritional therapy" because no-one else will. It's misconduct and unethical by my lights but it's often forgotten what Western homeopaths do in the developing world.
