So French people who eat carefully, exercise, avoid smoking and clean their teeth etc etc are both more likely 1. to stay healthy and 2. to eat at least some organic food? Do I look astounded?

Organic is clearly not a cure all. I’ll still take the 0.5% risk reduction though. Any risk reduction is a risk reduction.

I wouldn’t put my money on it - at least not for cancer reduction. It’s significantly more expensive therefore not accessible to many people
