Agreed that most of the health claims are nonsense, but not sure I agree that they’re identical or just fat. Most of them will have different compositions of fatty acids, and different effects in the body.
For example there’s a good deal of food science showing differing smoking points also lead to differing amounts of certain byproducts, some of which, mechanistically, seem undesirable. How this affects humans on a practical level seems uncertain and unanswered by reliable evidenc

I’m no expert, but it seems to me the processing of the different oils would be important, like oils processed without solvents should be better to cook with?
