I've been eating a bit more carbs than usual the last few days. My anxiety has also been up, which I had assumed was (and is still plausibly) because of other reasons, but it seems to spike right after eating them.

I definitely think sugar, caffeine and alcohol make me more anxious (in the long term - in the short term sugar and alcohol feel great!) -
I think I'll reset back to my previous carb consumption levels tomorrow and see if the anxiety drops back down. Will report back.

yes anxiety is tied to neuroinflammation. carbs and sugars put more gas in your tank, so if you already have toxic substances in your body they will ramp up the inflammatory response to an unhealthy degree

in my experience the less toxic stuff you are eating (mostly PUFAs), the better your nutrients are, and also the more exercise you do, the more carbs you can handle.

YES it absolutely is a thing. When I've tried to go fully vegetarian I get really anxious.

This happens to me for sure. I try to keep carb intake low because of it. No clue about the mechanism though

Could depend on the carbs as much as the net amount, plus a million other factors but consuming excessive sugar can probably make you anxious in a way similar to coffee
