This sample uses the ServerSideRender element. It’s critical to remember that ServerSideRender is a stepping stone to a full block editing experience: having to call back to the server to re-render is a worse UX than native JS rendering.

Use ServerSideRender to get your existing functionality ready for WordPress 5.0 now, and plan to phase it out over time.

We had used that approach in a WCEU2018 workshop to let people cuddle on a Gutenberg block but still work on server-side PHP: https://github.com/schlessera/wceu-2018-code/tree/6-thats-all-folks?files=1 … Too bad there's no complete support for server-side attribute registration (adding the Gutenberg controls)...

I agree, that was the most glaring shortcoming when I wrote this demo. It seems like adding a simple "generate UI" flag to the server-side attribute registration would be quite useful for folks migrating existing shortcodes to blocks.
