I find NZ Spinach an easy crop but is killed by frost, not something SoCal growers need to contend with. It might grow well through your winter if you can keep it well watered.

I shall try my best. Off to a rocky start. It’s dried out a little too much yesterday. Let’s see if it will bounce back in a few days.
