We would regard humans as bipedal, yes, but to say that all humans are bipedal would be scientifically unsound. And to say that someone could not lose bipedality by having their legs removed would also be scientifically unsound.
Note that you said "most". So not all. This is the Popperian black swan I keep talking about. If you want to compare it to walking, fine. Postmodernists can say that someone who has no legs is not bipedal - therefore bipedality is not a necessary attribute of humans.
