They do. But the fact that not all do makes categorization imperfect. I'm generally skeptical of critical gender theory, but this is one conundrum that has me stumped.

You make a good point. However, if defects can determine sex, then surely being trans, which one way or another results from biological "defects", also can too? Just playing devil's advocate here...

I don't think that's the case. Godel's incompleteness theorem applies limits to formal systems (mathematical models). Postmodernism is a philosophy built on the theories of Foucault, Lyotard, Derrida and others.

Yes, there's actually a name for this kind of total skepticism: pyrrhonism. It dates back to the Ancient Greeks, predating Godel, Heisenberg and Foucault by over 2000 years.
