Gender is genetically binary, but not sociologically/psychologically. Race is phenotypically discrete but not genotypically (c.f. Templeton)

You can be a man in 3 ways: pheno (physically), geno & social. Geno & pheno r done deals (barring mutations). But social (acquired) ain't.

With races, each has distinct phenotypes (tho not unfailing). However, specific genotype is variable, cuz geno & pheno =/= 1:1 relationship
