I have a lot of CC and I’m worried about the update. If I just take my mod folder out, save game, update, and then put them back I should be ok right?

No. If an update breaks a mod, it doesn't matter if you have it installed or not. The mod author needs to update it. You can't escape it by taking the mod out briefly then putting it back in, unless you get an updated version before you put it back in.

The patch / Seasons shouldn't affect stuff you've made in game. But just in case, you should save it to your Library from build mode. Or even better, upload it to the gallery, then there's really no chance it can get touched.
