Planes are not in the air for ever, would it not make sense and be safer to wait until they are on the ground before doing the upgrade? Most operational issues occur on conjunction with upgrades, be it a live one or one which requires a reboot.

Yup, but not a plane. Self sufficient drones which are in the air months on end is another use case, but not one I have come across.
