Previously, 75% agree. 2 years with SV and honing finishing techniques, 95% agree. My next kitchen build w/ my own salamander, you won't catch me in a steak house for anything less than A5 Waygu, something else I cant efficiently obtain, or socially permitted events.
Best steak I’ve had is in Japan. Wagyu is like fat explosion in every bite. It’s pretty intense.
Havent been to Japan, but I spent a bit working in high end Asian fusion. Have had plenty of A5. It's something else. Essentially steak butter. Chefs made care to minimize direct handling because your body temp touching it alone would start to render the fat.
