yeah i use bacon fat too... i also sometimes use a searzall. do you season before the vide too or nah?
Usually I don't, dont want to have any curing effects while in the bath, & seasonings can change in flavor in some odd ways during SV. I've had a searzall in my Amazon cart for far too long.
it rocks... takes a little longer than you'd think. nothing beats st8 fire imho.
