I just quickly lost a game of CIV 6 on "settler" difficulty because I wasn't taking defense seriously at all and now I'm having an existential crisis.

Yeahhhhhhh, I think I just need to go back to CIV 5 after all these attempts. I love long marathon games and the science just moves SO DAMN FAST. I got to the renaissance era and I still had classical swordsman. This really is designed for small map / turn count. I hate it.

There is a panel to see what all is impacting another Civ's opinion of you, but in the early game especially its pretty arbitrary. Also not sure how much the AI changes with difficulty. Mostly AI gets more starting resources. (They don't know how to use boats either)

In my experience they get a lot tetchier in higher difficulties, but I've mostly never run into early aggression on settler. Except maybe friggin' Gilgamesh. If he's nearby early game, it can be a bad time with his war carts.

I legitimately think the AI in civ 6 might be my least favorite AI in any game ever. It completely ruins the game for me. I can deal with AI hating me for inscrutable, computer reasons, but when they spend 10,000 years at war with me because I don't have enough spies?

You probably spawned near a warmonger civ. Unless you're very proactive, they tend to be looking for an excuse to attack. Sending an embassy instantly when you meet them for that positive influence score is crucial, especially on higher difficulties.
