Once the buttons become second nature, you can be aggressive, and it is thrilling. But you're too early in the game for that. Some general boss advice: blocking is your friend, patience is key, the fights are just a series of if-then statements, honour is for samurai not shinobi.

And to deal with the hassle of the small fry around the boss, you could grind to the next skill point (if you're close) then rush the boss a few times to learn his moveset. Once you're confident, you can go back to taking out them and his first lifebar with stealth.
