Rey changing the iconography of the Jedi relates to Rey changing the traditional value set of the Jedi she'll presumably bring into the future with her. Also, Rey refuses to directly strike him down, even to save her friends. Instead, she (too aggressively) defends herself.

I think they mean it's a break from the fairly heavy color coding we've seen in the movies up to this point. Jedi (and good guys) are predominantly green or blue, while Sith are red. A yellow lightsaber is none of those things, so it must be something new?
