There's a burger chain in the UK founded by Kiwis that has/had this. It's pretty good.
Beetroot is pretty common on burgers in NZ/Aus. Replaces the pickle, basically. More subtle, doesn't bring a lot to the table on it's own.
The notion kind of blows my mind. Because pickles have such acidity and sharpness and salt and sweet. With Beets, I get bitter and earthy and a deep carb sweetness. The two feel antithetical.
