If it makes a difference: The anime for THIS is much more in line with what we'd think of re: western merch-based cartoons - episodic, not a TON of loooooooong term continuity (on an anime scale), very "you can skip giant chunks of this."
The Sun/Moon anime (most recent series) is quite good! Would also recommend the first three animated movies. 3 especially, that one's a tearjerker.
As I understand it, anime alternates between "one American-sized season" and "effectively infinite number of episodes."
There is an anime sitcom called Sazae-san, never released in the US, that has aired a new episode almost every week since 1969 (and almost always tops the TV ratings for anime). Yes, that is on the order of 2,000 episodes.
And yes, there's also things like Devilman Crybaby and Aggretsuko (both on Netflix), 10 episodes each, the latter's episodes only 15 minutes. And a ton made to air on TV, for one or two quarters of the year.
In your defense, the way people talk about the lengths of anime series can also be inconsistent. Without getting too far into it, the Japanese broadcast year is split into 4 seasonal divisions (Jan-Mar, April-June, July-Sept, Oct-Dec) of 13 weeks.
A series might span only one of these divisions, also known as a cour. A show that runs for one cour might be anywhere from 10-13 episodes; 2 cours could be 20-26, etc. A series may go on for many cours, consecutively or taking breaks.
