now that Sky has an exclusive contract for germany, will F1TV still be available in germany in 2021?

If you go on F1 TV's website and click in the top right to select 'manage account' and then click 'my subscription' it should display whether you're on auto-renew or not.

So when I do have a F1 TV Pro annual subscription and don't cancel it myself I will be able to let that subscription automatically renew itself until 2024?

Yep for four years! Just make sure auto-renew is set as ON and you don't encounter any issues with your payment method when renewing.
