When I was younger (and a competitive swimmer), I could match the breath holding. Not so much now though <totally dead>.

I have never held my breath, while watching an underwater scene. I will try it in the future.

As a kid I would try it and I would never make it. As an adult I for sure cannot make it. It taught me a valuable lesson, stay the hell outta water.

When I see somebody underwater I start having trouble breathing like if I am under the water. It’s my anxiety

We have these things called mirror neurons in our brain that make us almost feel what we see. Like seeing someone yawn makes us yawn. I would imagine it may be similar in this situation for you.
