Almost everything I've seen uses some variant of Model-Predictive Control.

I've also worked a lot in Model-Reference Adaptive Control but never in a spaceflight environment. Not sure if it's suitable.

afaik adaptive control isn't applicable to nozzle actuation but it might be with higher angular velocity

yeah, likely not. Adaptive control is more appropriate for systems with model uncertainties.
