open question if you were being paid to write a gui application that people's lives depended on, what platform/frameworks would you choose

For flight controls/avionics, there are a small handful of languages that make DO-178B compliance remotely possible.

Avionics displays are operates by highly trained specialists, so ad hoc GUI ok. For me. devices, op. error is a huge failure pathway

so standard Windows GUIs, e.g. winforms, is actually a safety benefit, as operators aren't as trained rel. to pilots.
