  Eggplant is tricky, you might like a good babaganoush. I made a fine eggplant w garlic in olive oil sandwich for the woman who married me 26 years ago, gotta get a frond on it, some crisp, salt n pep. Where are you on okra, I have never met okra I like, yet.

  I'm not a big fan of eggplant, but zucchini & asparagus are my go-to veggies. I stir fry the zucchini, usually as part of medley/ragout that'll get curry broth poured over it & roast the asparagus with garlic, EVOO & fresh grated Parmesan.

  When I was younger I didn't like eggplant or zucchini. Now, I could eat them all day. There's a Chinese restaurant I go to that makes an eggplant dish that taste really good. My mom made a zucchini stew that awesome.
