In addition to my comment on the actual vid about one-thing-only robots being a negative opportunity cost for kitchen space, I also wonder: what's the lead time on bot maintenance and repair? Hours? Days? How often?

I work in manufacturing automation. You either have highly redundant systems that can handle well over daily capacity, or well staffed maintenance teams to minimize downtime. Sometimes both. In this case the redundant system might be a human.

I for one don't want to see robot chefs in fast food as they will give me the exact portion of meat at Chipotle, unlike the young people working.

Well, if they could have different robot chefs for different ingredients maybe they wouldn't get so many health problems... And then they could spend more on chicken... (Honestly, their business model is a boat made from the boxes their chicken came in...)

Great video, but one criticism. I was waiting for the comparison of similar kitchens with robots with and without the machines to show that the # of jobs was the same. Did you come across that in your research?
