In my gross weeabooess I refer to myself and 米国人 I always get the response 「アメリカン人じゃないの？」and my half clever response is 「カナダからチリまではアメリカです」I’m sure my logic is flawed though.

No you're actually pretty much on the spot. Most Japanese people assume アメリカ to be the U.S, but its actually all of the Americas Canada U.S Central America South America Caribbean
