I know this is a joke, but I think the cooked thing's name generally comes after the "yaki", like in yakiniku, yakitori, yakizakana. When it comes before the "yaki", it refers to the "way / style / form" in which it was cooked, like in "taiyaki, medamayaki, sukiyaki, okonomiyaki
