Have you tried sous vide? Having a steak be the same doneness all the way through is amazing.
I have not. Though some consider sous vide steak is blasphemy.

It's amazing and delicious. And you can still flash sear it in a cast iron skillet with butter before eating.

there was an article on a 400-day dry aged steak where they seated it then finished with sous vide. It looked amazeballs
