Mucosal dryness is typically associate with vitamin deficiencies, like low magnesium or B12 anemia. This isn’t from lack of carbohydrates but rather lack of meat protein.

I agree with the first part. But the glycan still needs carb oligosaccharides to make mucin. Some are then further glycosylated to give the mucosal barrier it's innate properties.

There are enough carbohydrates in meat and especially organs — I’m a proponent of eating organs — for this, if that is indeed the reason for dry mucosa and not a vitamin A, magnesium or (less likely) niacin deficiency. Also, carnivore =/= ketogenic diet.
