I’m curious what that expiration date is about? Does the message get deleted from their servers or is otherwise inaccessible after 60 days (ie to avoid such leaks) or is it the label that’s expiring?

It's standard practice at most corporations for e-mails to automatically delete after a certain period. It means they can't be subject to discovery in a lawsuit if the company is ever sued for something.
