Then you ought to try duck eggs. Yolkier yolks, a bit less white (not so good for meringue). Super for homemade mayonnaise (with light olive oil) or Hollandaise (with grass-fed butter). I've only seen organic, so I haven't done a comparison.
I'm not really concerned about the colour of the yoke, I expect it to be orange/yellow. The taste of organic eggs is obviously different. A non-organic eater might not tell which was which but they could tell a difference.
If controlled for variety of bird, what they eat & free-range, would be an interesting experiment to see if a blinded test shows differences between organic and not. My hypothesis is that organic is mostly a scam wrt nutrition and taste, once you control for other factors.
