Serious question: Have there been experiments where each animal controlled its own dose? If so, do we know how their alcoholism rate compared to that in humans?

Most animals refuse to consume alcohol voluntarily. The ability to learn to like stuff that one initially dislikes (bitter taste, chili, but also many drugs) seems to be specifically human. In most studies, animals receive such things involuntarily.

The paper actually addresses this. Also the animal experiments weigh more. They also convinced us that smoking is bad for your health.

That’s not true. No evidence backs alcohol administration for improving survival or any other end point. No serious scientific society recommends “moderate drinking” or start drinking if you don’t drink. If you drink, keep yourself within limits, which is quite different
