Ah, thank you - haven’t opened it yet, and it felt really firm, but wasn’t sure if that was just because it was vacuum packed.

I think it is basically same process as mozzarella but they hang it for a few days. The smoked flavour is pretty punchy so bear that in mind with whatever you're eating it with. TBF just slicing it onto crackers is delicious/easy so always a good option
