Stuff moves around inside i believe, not structurally fixed as it was

Well, that's making me feel very peculiar about standing up and walking around in a minute!

It does in adults, not a worry. In children they have to be selected by age/size to some degree

Yes! I watched a documentary once where a little girls got a kidney from her dad, and they were worried it might not fit. It did in the end and obviously she would “grow into it”. The brain is the only organ that’s nearly fully grown by 4 or 5, apparently

But we do need more donations from young people to help sick children on the waiting list https://www.organdonation.nhs.uk/get-involved/news/more-young-organ-donors-needed-to-save-lives-of-children-waiting/ …

Because they regenerate so well, livers can be split when transplanted. Often the split isn't equal, so a child/small person takes the smaller half & a larger person the bigger one. Presuming all goes well, you then have two living recipients, with the same donor's liver in both.

I'm not sure, but I think there's a bit of wriggle room with kidneys. I do know that when putting the new one in, the old one isn't taken out though

It doesn’t matter that much as long as the kidney functions and a kidney is transplanted in your abdomen. If it is too big you might feel pressure beneath your skin but that’s it. BTW I know many people who give a name to kidney or talk to it as if it is a baby.
