Multiple folds into a narrow triangle then trim to radius. (Did not yet look at the attached tweet - guessing based on your tweet.)

Did you learn that on your own? Or from someone who taught you? My mom taught me.

Working in restaurant kitchens - picked it up from the pros. I've never seen my mother line a baking pan...

Just curious, was your mom a good baker? I didn't learn wonders of parchment paper until I was an adult. Mom only used wax paper.

Yes, she is - nothing fancy (like homemade puff pastry), but a solid baker of pies, cakes, and cookies (though she's not a decorator of layer cakes
)

Ooh, that sounds like something I'd like! I'm a fan of berry pies.

This recipe is really close, but my mother uses less sugar (only 1/2 cup - she likes the tartness of berries, but adds more if they are really tart) and adds a splash of vanilla. I make it with Greek yogurt instead of sour cream.http://www.geniuskitchen.com/recipe/blackberry-sour-cream-pie-29930 …

Thanks, Dave! I would do yogurt instead of sour cream, too.
