Who exactly has a problem with water sticking to a vertical mirror when in-use it will be in-motion and viewed through an additional pane of glass?

I don't--though I grok boundary layer separation can create a locus of stability, (e.g. Raskin "undercut" airfoils) but only for dynamic loads. Unless it's a literal fog (in which case other problems surmount), I haven't experienced that. Perhaps it's an altitude/pressure thing?

maybe, there’s a *lot* of wacky percipitation I experience here in the maratime provinces, and lot of mist and fog and stuff. cold my also be a factor near freezing
