I always wanted to start a speakeasy bar which was limited to ~20 bottles. Creativity of constraints, sort of thing. (That's after I first start my cash-cow bar concept called Stoop.)
After dating a bartender of really high-end cocktail bars for a couple of years, I'm not sure if my dream of owning a bar is more realistic or more dreaded.
