I don't read that this interviewer is suggesting freelancers take for granted how hard it is to get work. In fact, the opposite: those who *haven't* tried to freelance FT have some magical thinking as to how easy/flexible/prosperous it is.

Yeah I'm just saying I've never heard that sentiment from any of the freelancers I know or work with. They all know they're trading something safer for other benefits. The only people I know who think freelancers work that much less are full-time employees.

It’s hard not to read that as “I am glad my previously underpaid employees, who were able to shift their life in a significantly positive direction, are now suffering because they did not respect my superior business strategy of being lucky during a pandemic”

Yeah maybe we're reading it uncharitably, but I know many people who've dealt with these personalities (myself included) so it doesn't feel wrong.
