So I’m honestly kinda surprised other types of sponsored content stuff doesn’t happen on github sponsors bc github literally doesn’t take a cut at all - is this just not a known thing?

It encourages you to base it around tiers and fully supports rewards. Can optionally enable one-time donations equivalent to subscribing for one month, and there's also the option of allowing custom amounts which are considered to be part of the reward tier below the amount.
When they launched GitHub Sponsors, they had a limited time promotion of matching up to 5000 USD of donations in your first year. That's likely a major part of why they were so strict with the approval process early on since it would have been easy for that to be heavily abused.

Hard to have any complaints about a zero fee Stripe-based donation platform. There's supposedly going to be a 10% fee for organizations, but they're currently waiving it. I wouldn't be interested in using it for accepting donations to a non-profit if they end up having the fee.
