Uh, like ever? Or does this just mean the data isn't recoverable? Or is this saying it's going to irreparably brick the phone?

They mean you won't be able to do further remote device management because you'll be wiping the device management setup.
It will still tied to the account and will require logging into that in the setup wizard as part of their theft deterrence factory reset protection feature.

OK cool, that makes sense. The wording was spooky so I just wiped it using recovery mode.

It really always uses recovery mode to wipe. Factory reset in the Settings app and a device manager simply trigger rebooting into recovery with the command to almost wipe everything (data, secure element, etc.) other than the frp data and currently eSIMs for some reason.
