Can also always add multiple kernels as boot entries for UEFI but it probably doesn't give you a great menu for choosing them. More than good enough for a fallback / recovery boot mode though, and there's one less thing which can break so that's helpful.

this. i have one linux machine, and it boots the kernel directly from uefi. secure-boot enabled, signed by my own keys. microsoft's have been jettisoned from the system
