This is the scripting for the archlinux.org infrastructure on Hetzner dedicated servers:
gitlab.archlinux.org/archlinux/infr
It sets up a little Arch Linux chroot in the rescue environment and installs to the disk with pacstrap from there.
I tend to use the approach of just copying an existing install onto fresh partitions. Can make up a container with a tool like pacstrap locally and just copy it everywhere. For VPS services, can ideally take a snapshot of that initial setup and deploy that for the new instances.
