Nvidia is already trying to do that with their LHR cards, which drastically limit performance for specific types of mining.
... but they're also selling purpose-built mining cards to crypto companies, in case there was any question about their motives.

They just want to charge a premium on cards with the full compute capabilities for mining and potentially other things. It's just the usual underhanded product segmentation with artificial limitations. They've just managed to spin it as if they care about gamers getting GPUs.

Since, as you said, it's not like they are going to give up any sales to miners. They're just going to be getting more money from each of those sales unless the miners find a way around it as they have in the past. It was possible to just flash the other firmware to uncripple it.
